If food isn’t on your top 3 list of reasons why you are visiting Mexico, we can’t be friends anymore. If it is, then this article is for you. The food scene in Puerto Vallarta is fantastic and offers something for everyone, from street food to fine dining and anything in between.

Fresh seafood, tropical fruits and vegetables, as well as delicious meats from local mountain farms, offer the chefs in the city a never-ending supply of fantastic ingredients to play with. No wonder that Jalisco is the birthplace of so many iconic Mexican dishes, such as birria tacos, pozole, torta ahogada (a torta stuffed with carnitas and dipped in consomé), charro beans, and more. I was recently invited to attend Tianguis Mexico and attended a press trip to Puerto Vallarta to eat my way through the city.

So let’s dive in and discover some of the most amazing fine dining restaurants in Puerto Vallarta that will make your taste buds tingle, shall we?

Icú got its name from the indigenous name for corn, one of the most notable ingredients of Mexican cuisine. Chef Mauricio Leal combines French techniques with traditional Mexican ingredients and local dishes that are unique and creative. The focus is on the freshest local and seasonal ingredients, and the menu changes with the season.

The restaurant offers a 5/7/9 course prix fixe menu with or without wine pairing. Dishes like sous-vide filet with mole, brined seabass tostadas, short rib birria tacos, or chocolate tamal with dehydrated chocolate mousse will take you on a culinary journey through Jalisco.

And don’t miss out on the fantastic cocktails, they were fantastic. I had the Tahi with Mezcal and Campari, tangerine, raspberry, and citrus, and it hit all the notes: smoky, bitter, sweet, and refreshing.

I loved the atmosphere at ICÚ. The design was modern but with a natural vibe. Several mango trees grow right through the dining area. During mango season, they actually use the mangos in their dishes and cocktails. Pretty cool, eh?

Puerto Vallarta Fine Dining Le Bistro

Located overlooking the Cuale River, this French bistro has a touch of colonial elegance with its traditional French design surrounded by tropical, lush greenery. Add in the fairy lights and lanterns decorating the trees and a live jazz trio playing in the background, and Le Bistro is one of the most romantic dining spots in the city.

The menu is French/Mexican fusion, taking advantage of delicious and fresh local ingredients. I started the meal with a fantastic Butternut squash soup, with crème fraîche, pumpkin seeds, and microgreens. It was so creamy and delicious! Other appetizer options were various soups and salads, tuna tartar tostada, ceviche, pork belly, and lobster potstickers.

For my main, I decided on the Red Snapper filet with roasted sweet potato and beets, crispy quinoa, and lemongrass velouté. The fish was perfectly cooked, with crispy skin yet deliciously moist, and the combination of the earthy sweet potatoes and beets with the refreshing lemongrass was unique and interesting. Other options were stuffed Cornish chicken, duck enchiladas (now that sounds amazing!!!), crab-stuffed fish filet, fennel-crusted lamb loin, and many more. It was so hard to choose!

To be honest, I wasn’t the biggest fan of the Crème Brulée. It was a bit too sweet for my taste, but the apple tart with ice cream looked absolutely divine.

Don’t miss the sunset here! The open facade gives you a perfect view over the Cathedral and the Malecon in the background. To make this place even more dreamy, you’ll be serenaded by violinists who come right up to your table. What an experience! I have to admit, when they started playing ” Hallelujah ” by Leonard Cohen, not many eyes at our table stayed dry.

Also noteworthy were the cocktails here. I chose to order their signature cocktail: A tequila martini with avocado syrup, matcha, and banana liqueur. It sounds very strange, but it was actually delicious. Creamy and not too sweet, perfect for a tropical summer night.

The menu is International/Italien and fits perfectly to the ambiance in this restaurant. I enjoyed a Burrata salad, fresh seafood and a delicious chocolate dessert.

How does the price of fine dining in Puerto Vallarta compare to San Diego?

Fine dining in Puerto Vallarta costs a fraction of what you’d pay in San Diego for a comparable experience. At ICÚ — a 2026 MICHELIN Guide Bib Gourmand pick — a full tasting-menu dinner runs roughly 1,200–2,000 MXN per person, or about $65–$110 USD, and that’s for one of the most acclaimed kitchens in the city. Le Bistro and La Cappella sit in a similar upscale-but-approachable range, with multi-course dinners generally landing well under $100 USD per person before drinks.
